3 nourishing Christmas ideas

Makes 2 small cups

2 cups of chopped watermelon
Handful of fresh mint
Juice from 1/2 a lime
1/2 tray of ice & 1 cup of filtered water

Blend everything except the water on high speed until it is mushy, around 1minute.
Add water and blend again on high speed for approx 30sec
Enjoy with a friend!

Spiced Nut Mylk

Makes 2 large cups

1/2 cup of raw cashews – soaked for 1hr
2-3 cups of filtered water – depending on how rich you like your mylk
1tsp cinnamon
1/2tsp nutmeg
1 vanilla pod – seeds removed
Honey or sweetener to taste

Blend nuts and water on high for 1-2 minutes, you should have a milk like consistency and colour.
Add remaining ingredients – blend then taste and add extra sweetener or spices to suit. This will keep in the fridge for 2 days but is best enjoyed straight up.

Seriously you just can’t go past fresh summer fruits in our part of the world. Make it beautiful, make it fun –

Strawberry Santa’s – Cut up strawberries and spoon fresh cream into the middle of them, the tip of them being the little Santa hats, You can use black sesame seeds as eyes.
Watermelon Christmas Trees – Use the rind as the base and cut into Chrissy tree shapes.
Fruit Wreath – Cut up all your favourite fruits and decorate on a large plate in the shape of a Christmas wreath.
Candy Canes – Cut strawberries and banana’s and create Candy Cane shapes by alternating the two to make stripes of colour.
