4 Ingredient Cookies
Before I give you this recipe I need to share with you how I come about creating my treats. I find a recipe I like the look of (this one is from a divine book called Wholefood Simply) and then I jig it around a little so it works for me. This is sometimes out of necessity, being that I don’t have all the ingredients, or because I go the healthier option. I then add different flavours, depending on how I am feeling on that day. So in other words I never follow a recipe, and sometimes it all works out and I discover a delicious new dish! There are of course those other times when it all goes awry and turns into an absolute failure….you won’t see those photo’s or recipes posted on here! So here are my 4 ingredient cookies…
2 cups of shredded coconut
15 Medjool Dates
Pinch of salt
1 vanilla bean – podded OR 1tsp vanilla bean powder (you can also do Ginger cookies by using 2Tbsp powdered Ginger Or Cinnamon by using 2 tsp cinnamon)
Preheat oven to 180 degrees. Blend ingredients all together really well until a dough forms. Roll into small balls, then flatten out with a fork so you get those lovely little lines on top of your cookies. Bake in preheated oven for 10 minutes, then allow to cool completely. These will keep for a few days, they are best eaten in the first couple though. Enjoy!
