Beetroot Bliss
Not only do they look pretty, but they are a crowd pleaser due to the cacao butter which gives them a lovely creamy flavour. This should give you approx 10 bliss balls.
You need;
2 cups shredded coconut (plus a handful to roll the balls in)
40g cacao butter (*You can use coconut oil, however it will change the taste and will not set as well)
1/2 large beetroot, peeled
2TBsp maple syrup
2TBsp honey
3TBsp cacao powder
pinch of good salt
To Prepare;
- Melt the cacao butter over a VERY LOW heat, slowly.
- Put everything (except for the handful of coconut) into a blender and give it a good wiz.
- You should end up with a fairly dense, but wet, mixture. Get ready to get purple! Roll into balls, approx 1 Tbsp, covering in your extra handful of shredded coconut. Place in the freezer to set for approx 30 minutes.
