Chewy Cookies

These cookies are my go to treat, I ALWAYS have a batch made up in the cupboard ready to go. They are gluten free (as long as you go for gluten free bicarb soda) and lowish in sugars, just limit it to 2 at a time, and try not to eat all the batter before you bake them!

Cookies –

2 cups shredded coconut
8 medjool dates
1 Tbsp honey
2 Tbsp coconut flour
1/4 tsp bicarb soda
pinch salt
1/2 tsp vanilla powder OR 1 vanilla bean (You can also make ginger cookies by swapping the vanilla for 1/2tsp cinnamon powder and 1/2tsp grated fresh ginger)
Optional – 1 Tbsp nut butter

Preheat oven to 180 degrees. Blend all together – don’t over blend though as you want the coconut to add an extra crunch. Roll into balls (approx 1Tbsp in size) and press into cookies. Bake in oven for 10 minutes (check after 8 minutes) until cookies are golden, but not too browned. Once cooled you should have beautiful chewy, with a little crunch, vanilla date cookies.
