Coconut oat cookies
These yummy cookies are satisfying and nourishing. With no added processed rubbish they are a fantastic lunchbox snack for the little ones as well as a healthy morning tea snack when you are on the go. You can make them gluten free by sourcing gluten free oats, which can be hard to come buy and expensive but worth it to add the healthful benefits of whole rolled oats into a gluten free diet.
You need; (and preheat oven to 180d)
Dry ingredients to mix together – 1 1/2 cup oats + 1/4 cup coconut flour + 1/2 cup shredded/desiccated coconut + 1/2 cup sultanas + (Optional) pinch of cinnamon, nutmeg, 1 x vanilla
Wet ingredients to melt together over low heat – 1/2 cup (melted, it’s approx 100g) ghee (I love Ghee and it’s endless health benefits but you can also use organic butter) + 1/4-1/2 cup honey (depending on how sweet you like your cookies, you can also use maple syrup/rice malt syrup). Once melted together and starting to foam a littletake off the heat and add in 1 tsp bicarb soda and stir really well. It will foam up a lot.
To prepare;
Pour the wet ingredients into the dry one’s mixing as you go. Mix well until fully combined, you should end up with a fairly wet mix. Roll into balls, approx 1 TBsp size, pressing firmly together, then place on oven tray lined with baking paper, press the ball to flatten a little. Bake for 12-15min, they should be golden on the outside but still soft to touch. Let cookie cool to harden. Enjoy 🙂
