Raw Muesli Bars
An awesome healthy, nut free, lunchbox treat…
1 cup of shredded coconut
1 1/2 cup mixed seeds and dried fruit – I use a yummy mix with buckwheat kernels, sesame/flax/pumpkin seeds. millet, sultanas and gogi berries
6 fresh dates, pitted
1/4 cup tahini
1/4 cup raw honey
1/4 cup melted coconut oil
1 tsp vanilla powder/vanilla pod
Blend 1/2 the coconut, 1/2 the mixed seeds, dates, tahini, honey, coconut oil and vanilla together on high for approx 30sec. You should end up with a doughy, fairly wet, mixture. Add in the remainder of coconut and seed mix, blend together on low until well combined.
Press into a baking paper lined tray, or silicone mould, 900ml/1000ml in size. Freeze for 30 minutes, then slice into small pieces and store in air tight container in freezer for up to 4 weeks.
