Raw chunky choc slice
I have now had to have an enforced break from this slice, it is simply too good. While there are a few steps it is relatively easy and well worth any effort. A big hit with all members of the family we were rationing it out in the last few batches to make sure everyone got their fix. Hope you enjoy it as much as us!
Ingredients:
Base –
1 1/2 cups shredded coconut
1/2 cup raw almonds
6 dates
2 Tbsp honey
1 Tbsp coconut oil
2 Tbsp raw cacao powder
Pinch of salt
Top –
250grams cacao butter
2-3 Tbsp raw cacao powder
1 Tbsp honey OR 2 Tbsp maple syrup (maple syrup makes a better consistency chocolate, however it’s not a big difference if you simply want to use honey to keep ingredients list down)
Pinch of salt
Optional extras for Top – I use cacao buckini’s (can be bought from most bulk food health stores), some shredded coconut and caramel nut butter. You could pretty much add anything your little heart desires from nuts to dried fruit.
1/4-1/2 cup cacao buckinis
Caramel nut butter – 3 Tbsp almond butter + 6-8 medjool dates + 1 Tbsp honey blended well to make a paste like consistency
1/4-1/2 cup shredded coconut
To make:
1. Put the cacao butter in a saucepan and onto a VERY LOW heat. Keep an eye on it, you want to take it off the heat just before it’s all melted and allow it to sit to finish melting. This will take approx 10 minutes (depending on the size of the butter chunks) Do not let it burn!
2. Place almonds and 1 1/2 cups shredded coconut into a food processor and blend together, when ground and combined add all other ‘base’ ingredients and blend well to make a nice dough like consistency.
3. Press mix into a ceramic/baking dish, I use one which is approx. 20cm long and 6cm deep. I don’t use anything to line my dish and it comes out no worries. If you feel this may be a problem you can line with baking paper. Place in the freezer while you prepare the top.
4. Once your cacao butter has melted you can either mix your top in the saucepan or place in the food processor. I use my Thermomix as the better blended the chocolate the better it tastes, if you do it in the saucepan just be sure to mix really well. Add cacao powder (2-3 Tbsp depending on how rich you like your chocolate), honey/maple syrup and pinch of salt. Once you have a silky smooth chocolate you can pour onto your base and add your toppings!
5. Simply sprinkle your toppings over – as much or as little as you like. Then place back in the freezer for approx 30 minutes before cutting into nice chunky squares of chocolate goodness!
