Pat’s banana bread

This recipe was created with love and patience, and by Lotus and I telling Pat that this batch was crap, then the next one was better, until he finally got it right! Enjoy and please share your feedback xxx

Pat’s best Banana Bread Recipe (grain free)

Ingredients;

150g of good (organic if possible) butter
4-5 really ripe banana’s – mashed
2/3 cup almond meal
1/3 cup coconut flour
2 eggs
1tsp vanilla powder
1tsp baking soda
2 Tbsp honey
pinch of salt
To make;
1. Preheat oven to 180 degrees
2. Mix the butter, honey and eggs together in a food processor
3. In a separate bowl mix the flours, baking soda and vanilla together
4. Add wet mix to dry mix and combine, along with the mashed banana’s
5. Place mixture into a bread tin which is either lined with baking paper or greased with coconut oil *Optional you can add walnuts/slivered almonds/shredded coconut to the top
6. Bake for 50 minutes
*We keep ours in the fridge which makes it last longer (it can go off in about 3-4 days in hot weather).
